Preheat oven to 375°F and grease a doughnut tin.
In a mixing bowl, whisk together all of the dry ingredients, minus the coffee.
In a separate bowl, mix together the water and instant coffee.
Blend the eggs into the dry mixture.
Slowly pour the the coffee mixture and remaining liquid ingredients to batter, stirring until well combined.
Pour batter evenly into the doughnut tins.
Bake for 15-18 min, or until fully cooked
Note: To check if they are done, stick a toothpick into the center. If it comes out clean, they are done.
Allow the doughnuts to completely cool before topping with your favorite sugar-free syrup or frosting.
