Seafood can be intimidating to prepare at home, but this recipe is as easy as simmering some ingredients in a pot and adding a piece of fish. The salsa gives a unique taste that is different than most seafood dishes--the flavor profile pairs perfectly sliced avocado or a crisp side salad.

In a pot with a lid just big enough to fit the cod fillets, heat the oil. Add the onion and cook for 3 to 5 minutes or until the onion has softened. Add the garlic and cumin and cook for another minute until fragrant.
Add the vegetable broth to the pan then stir in the salsa. Bring the salsa mixture to a simmer and cook for about 5 minutes. Stir in half of the cilantro.
Place the cod fillets in the pot and cover with the lid. Steam for 6 to 7 minutes or until cooked through and flakey. Divide the fillets and sauce between plates and top with the remaining cilantro. Enjoy!
