In a large bowl, add the cream cheese, 1/2 cup of the heavy cream, and vanilla extract. Use an electric hand mixer to beat until the mixture is soft and smooth, about 1 minute.

Turn the mixer off and add the erythritol, cocoa powder, and salt. Starting on low speed, continue to mix and then increase to medium/high speed until ingredients are combined and form a thick chocolate batter. Set aside.

Add the rest of the heavy cream to a separate medium bowl and use the electric hand mixture to beat until stiff peaks form.

Gently fold the whipped cream into the chocolate batter using a spatula until consistent and fluffy.

Spoon the chocolate mousse into separate glass containers and refrigerate for at least 1 hour before serving. Top with berries and mint (optional).
