 4 large eggs
 4 oz bacon(chopped)
 1 small red onion(diced)
 4 oz spinach
 3 tbsp whipping cream
 1 oz parmesan cheese (or another cheese of your choice)
 ½ tsp garlic powder
 salt and pepper, to taste

Preheat your oven to 375 degrees. Meanwhile, cook the chopped bacon in a frying pan until brown and crispy. Set aside the cooked bacon.

Do not throw away the bacon fat. Cook the diced onions in the same pan. Once caramelized, add the spinach and cook until soft. Sprinkle with a small amount of salt.

Transfer the spinach and diced onions to a baking dish. In a separate bowl, whisk eggs, whipping cream, salt, and garlic powder.

Put the egg mixture in the baking dish. Then add the cooked bacon, followed by a final layer of cheese.

Bake for 35 minutes. Serve warm and enjoy!
