This recipe makes a satisfying lunch, or a light keto dinner with a unique union of flavors and textures. Using rotisserie roast chicken, or leftover cooked chicken, these cabbage bowls are quick and easy to make with no cooking time required!

Wash half head of cabbage and cut it down the middle into two evenly sized pieces.
Pinch the top of the cabbage leaf and gently pull the leaf down to the base. Carefully snap the cabbage leaf off the base and set your bowl aside. Repeat until you have plenty of cabbage leaf bowls.
Finely chop green onion, walnuts, and pickles.
Cut the berries or grapes into halves or quarters.
Place all ingredients in a large bowl (chicken, green onion, pickles, walnuts, and berries) to make the filling.
Add keto-friendly mayonnaise, dill, and parsley, and mix all ingredients together.
Salt and pepper to taste.
