In a sauté pan over medium heat, cook the bacon for about 4 minutes, until the fat begins to render and the bacon becomes crispy.
Add the olive oil, onions, and garlic to the pan and sauté for 1 to 2 minutes, until the onions are translucent. Remove from the pan and set aside.
Season the chicken with the salt, place in the pan, and sauté for 2 to 3 minutes on each side. Add the chicken stock and simmer until the chicken is fully cooked, 8 to 10 minutes. Remove the chicken from the pan, then roughly chop or shred the meat.
Return the bacon and onions to the sauté pan over medium heat. Add the cheeses and whisk until the mixture is smooth and warmed through (5 to 7 minutes).
