Instructions
Cinnamon Roll

Preheat the oven to 400° F and grease a baking dish.

In a microwavable safe bowl, mix together the flour and mozzarella cheese.

Add the cream cheese in chunks and microwave for 1 minute, stir, and microwave for another 30 seconds.

Stir in the egg, baking powder, erythritol, and extracts.

Start to combine using a fork, then use your hands to make a ball of smooth dough.

Roll out the dough into a large rectangle.

Spread butter onto the dough,

Combine the erythritol, cinnamon, and espresso powder (optional) and sprinkle over the dough

Roll into a long roll and cut into 8-10 equal length parts.

Place rolls into the baking dish and bake for 20-25 minutes.

In a bowl, mix all of the frosting ingredients together.

Spread frosting over the warm rolls.

    1. Hi, Latanya! Cream cheese does add moisture and texture to the dough so it is cinnamon roll like; however, you can swapping it out with try dairy free and vegan alternatives.

  3. I tried making these today and the dough was so sticky there was no way to roll it out. I tried rolling between two pieces of plastic wrap but then couldn’t Get it rolled up with the center in them. Ended up adding almond flour on the out sides just to get it in the pan. What did I do wrong? Does it really only need 1/2 cup of almond flour?

    1. Hi, Loretta. Based on how long you warmed up the dough, it can become stickier. We would recommend doing exactly what you did and adding almond flour until the right texture is achieved.
