Ingredients
Dough
 1 ¼ cups Part skim shredded mozzarella
 ½ cup Almond flour
 2 oz Cream cheese
 1 Large egg
 2 tbsp Erythritol granulated
 1 tsp Baking powder
 1 tsp Vanilla extract
 1 tsp Coffee extract
Filling
 ¼ cup Erythritol granulated
 1 tbsp Cinnamon
 3 tbsp Butter, softened
 1 tsp espresso powder (optional)
Frosting
 2 oz Cream cheese
 ¼ cup Powder erythritol
 ½ tsp Coffee extract

Pre-heat oven to 400° F (200°C)

Mix the flour and cheese together. Add the cream cheese in chunks and Microwave for 1 minute. Stir and Microwave for another 30 seconds.

Stir in the egg, baking powder, erythritol, and extracts. Start to combine using a fork, then use your hands to make a ball of smooth dough.

Roll out the dough into a large rectangle. Smooth the butter over the dough.

Combine the erythritol and cinnamon and espresso powder (optional) and sprinkle over the dough

Form a long roll, as tight as you can. Cut into 8 or 10 equal parts. (For even more gooey roll, take some melted butter and pour it over the top before baking)

Place rolls into lightly greased dish and bake for 20-25 minutes.

While the rolls are in the oven, prepare the frosting: Mix the frosting ingredients. Add cream for a thinner frosting.

Spread over the warm rolls and serve.
