Here’s one of the many ways to enjoy corned beef while on a keto diet. In this recipe, all you need to do is combine corned beef with cauliflower and serve it with egg for a filling keto breakfast! You can cut a whole cauliflower into florets or feel free to use riced cauliflower instead if you miss rice.

Heat 1 tablespoon of olive oil or coconut oil in a skillet.
Add the chopped onions and saute until they’re tender.
Add the corned beef and cook for about 5 minutes, then add the cauliflower florets.
Mix everything and cover for 10 minutes.
While waiting, cook an egg, sunny-side up.
Serve the corned beef and cauliflower hash with the egg on top and freshly chopped parsley if you like.
