Combine the butter, heavy cream, cream cheese, erythritol, and vanilla extract in a medium bowl.

With a hand mixer, blend the fat bomb mixture until thickened.
Note: if the mixture does not thicken, continue to mix until the heavy cream thickens up.

Roll the fat bombs into 12 balls.

Chop the coconut into finely shredded pieces.
Note: you can also run this through a food processor.

Roll each fat bomb in the coconut to full coat the outside.

Melt the keto chocolate chips in the microwave.

Drizzle the melted chocolate over the fat bombs.

Serve immediately or store the fat bombs in a sealed container in the fridge.
