Marshmallows are perfect for summertime s'mores, rice crispy treats, or chopped up in keto cereal. The problem is marshmallows definitely aren't keto! But, these simple, sugar-free keto marshmallows are a fantastic alternative!
Enjoy them in a keto dessert or alone. They are low-calorie and low-carb, so don't feel guilty about eating them as a snack throughout the day! Want to spice them up a bit? Add sugar-free chocolate chips, cocoa powder, coconut flakes, or dip in melted sugar-free chocolate.

Line a square baking sheet with parchment paper and set aside.
Heat half of the water (1/2 cup) and the 2 tbsp of gelatin in a saucepan over medium heat, stirring frequently.
Note: as soon as you pour the gelatin powder in, start stirring.
Once bubbles begin to form and the mixture turns more translucent, pour in the remaining water, vanilla extract, sweetener, and any other flavor drops you'd like to add.
Remove from heat and continue to stir until everything is well combined.
Pour the mixture into a large bowl and beat with a hand mixer for 10-12 minutes or until a thick, frothy texture is achieved.
Pour the mixture into the pan and smooth the top with a spatula.
Place the keto marshmallows in the fridge and allow it to cool for 4-6 hours or overnight.
Note: they are done once they are no longer sticky.
