Bring the water to a boil in a saucepan over high heat. While the water is heating, line a fine-mesh sieve with cheesecloth. Blanch the cauliflower in the boiling water for 3 to 4 minutes. Remove from the water and place in the sieve to drain for 5 to 10 minutes.
Place all the ingredients in a large bowl and mix until well incorporated. Divide among four 12-ounce (or larger) containers or jars and refrigerate overnight.
Serve chilled. Store leftovers in the refrigerator for up to 5 days.
