Peel and cut the onion in half.
Cut slices lengthwise to create an onion ring shape and pop out the layers of onion within the onion ring.
Mix the eggs in a shallow bowl until well combined.
Place the pork rinds in a large ziplock bag and crush to a fine consistency.
Add the seasonings into the pork rind crumbs and shake until well combined.
Dip each onion ring piece into the egg wash and then place in the ziplock bag.
Shake until the onion is evenly coated.
Note: if you have a difficult time getting the crumbs to stick, try pressing them directly into the onion. If the pork rinds begin to clump and will no longer stick, you may have let too much egg into the bag. Start again with freshly crumbled pork rinds in a new bag.
Place the onion rings in the air fryer at 380 degrees Fahrenheit for 6 minutes.
Allow your keto onion rings to cool before serving with a side of your favorite keto condiment (we recommend spicy mayo).
