Chopped bacon, garlic, and smoked paprika spice up basic green cabbage in this delicious side dish that will get even the kids to eat their vegetables. For a vegetarian version, sub out the bacon for a plant-based version, or use chopped shiitake mushrooms or smoked tofu.

Heat a skillet over medium heat and add the bacon. Cook until browned and crispy, about three to four minutes. Add the onion and continue cooking for another two to three minutes or until the onions are soft and translucent.
Add the cabbage and garlic. Cook for 20 to 25 minutes or until the cabbage is soft. Stir occasionally.
Add the paprika, salt, and pepper. Stir and cook for another six to eight minutes. Divide evenly between plates and enjoy!
