Ingredients
 2 (15 to16 oz total) boneless skinless chicken breast
 2 tbsp Avocado oil
 Salt and pepper to taste
 1 tbsp Minced garlic
 1 Packed cup fresh basil leaves
 ¼ cup Pine nuts
 3 Garlic cloves
 3 tbsp Extra virgin olive oil
 ¼ cup Parmesan cheese freshly grated
Instructions

In a food processor or blender, combine the basil, pine nuts, garlic, olive oil, and parmesan cheese and process for a couple of minutes until paste forms, don't overdo it since we want some texture.
Leave aside

Chicken

Preheat the oven to 400 F.

Slice chicken breast horizontally to create 4 thin cutlets. Season to taste with salt and pepper.

Spread the avocado oil over a baking sheet evenly, Place the chicken on baking sheet. Spread about 1 teaspoon of pesto over each piece of chicken.

Bake for 15 minutes or until chicken has reached 165 F.

Remove from the oven and spread one more tablespoon of pesto on each and serve.
