In a food processor or blender, combine the basil, pine nuts, garlic, olive oil, and Parmesan cheese, blending until a
paste forms.
Preheat the oven to 400°F.
Slice chicken breast horizontally to create 4 thin cutlets.
Season to taste with salt and pepper.
Spread the avocado oil over a baking sheet evenly.
Place the chicken on baking sheet and spread about 1 teaspoon of pesto over each piece.
Bake for 15 minutes or until chicken has reached 165°F.
Remove from the oven and spread one more tablespoon of pesto on each piece.
