Preheat the oven to 350°F
In a small bowl, mix all the ingredients for herb butter and aside.
Clean and pat dry the turkey
Place in a large roasting pan.
Stuff the cavity of the bird with the onion, garlic, and celery.
Loosen the skin of the bird by putting your hands between the skin and the breast meat working your way down the leg.
Take some of your butter mixture and rub it thoroughly under the skin over the breast and leg meat.
Pour the olive oil all over the turkey and season with salt and pepper as desired.
Place the turkey breast side up into the oven and bake for 4 hours.
Halfway through, baste the turkey juice all over the skin and continue to do this step until it is done to avoid the turkey from drying.
Once the breast meat is165°F remove and cover with foil for 30 minutes.
