In a large cast-iron skillet, add 1 tbsp of avocado oil at medium heat.
Add the diced onion and bell pepper to the pan and saute until the onions are translucent and starting to soften (about 5-10 minutes).
Add in the diced tomatoes.
Bring the mixture to a simmer and let it cook for about 15 minutes.
Make about 6 holes in the mixture with a spoon.
Crack one egg into each hole.
Cover and continue cooking until the egg whites are set.
