Preheat the oven to 350°F.
Cover and heat spinach over medium heat until water is gone.
Stir in garlic, cream cheese, 2 tbsp of the grated cheese, salt, and pepper and cook until cheese has melted.
Trim the ends of the zucchini and cut them in half lengthwise.
Scoop out the pulp, leaving 1/2-in. Shells.
Sprinkle the shells with salt and pepper and bake for 10 minutes.
Remove from the oven and fill with spinach and remaining grated cheese.
Broil for 5 minutes or until lightly golden.
