Rich, garlicky pesto adds a hit of flavor to this simple main dish. It doesn't take long to make your own pesto using a food processor, but jarred store-bought pesto also works just fine. Try serving the shrimp over cauliflower rice with a side of keto grilled cabbage and zucchini pancakes.

 10 ½ oz shrimp(peeled and deveined)
 ¼ cup pesto
 ¼ lemon(juiced or to taste)
 salt(to taste)
 black pepper(to taste)

Directions

Heat the oil in a pan over medium heat. Add the shrimp and cook for one to two minutes per side or until cooked through.

Add the pesto and lemon juice to the pan and season with salt and pepper. Stir to coat the shrimp in the pesto sauce.

Divide between plates and serve with additional lemon juice if needed. Enjoy!
