Pancakes
 1 ¼ cups almond flour
 3 whole eggs
 3 egg whites
  cup unsweetened almond milk
 2 tbsp stevia blend
 ½ tsp pumpkin extract
 1 tsp pumpkin spice powder
 1 pinch salt
Frosting
 3 oz softened cream cheese
 1 tsp butter or ghee
 ¼ cup coconut cream
 1 tbsp stevia blend
 1 tbsp pumpkin spice
 ½ tsp cinnamon

In a griddle or frying pan, heat butter or oil over medium heat

In a bowl, blend all pancake ingredients together until batter is smooth

With a ¼ measuring cup, add the batter to a pan/griddle

Leave pancakes for about 2 min. each side and flip

With an electric mixer, blend softened cream cheese and butter until well combined

Add stevia and pumpkin spice and mix until well combined

Slowly add coconut cream and whisk until texture is smooth

Top frosting on each pancake

    There seems to be a “slight” issue with this recipe. It yields 1 serving of over 1500 calories.
    It looks like it’d have to make more than 20 pancakes to get to 72 calories
