 1 ¼ cups almond flour
 3 whole eggs
 3 egg whites
  cup almond milk
 2 tbsp Stevia blend for baking (this can be adjusted and modified depending on preference).
 ½ tsp pumpkin extract
 1 tsp pumpkin spice powder
 pinch of salt
Frosting
 3 oz softened cream cheese
 1 tsp butter or ghee
 ¼ cup coconut cream
 1 tbsp Stevia blend
 1 tbsp pumpkin spice
 ½ tsp cinnamon

In a bowl, whisk all ingredients with an electric mixer or blend in a blender.

With a ¼ measuring cup, add the batter to a previously heated and greased griddle.

Leave pancakes for about 2 min. each side and flip.

With an electric mixer, wisk the softened cream cheese with butter.

Add the Stevia and pumpkin spice and continue whisking.

Slowly add coconut cream and whisk until smooth.

When done, add the frosting between each pancake, as well as on top.

    There seems to be a “slight” issue with this recipe. It yields 1 serving of over 1500 calories.
    It looks like it’d have to make more than 20 pancakes to get to 72 calories
