
Preheat oven to 375°F and grease a cupcake tin.
In a bowl, whisk together the dry ingredients and set aside.
In a separate bowl, blend together the wet ingredients until well combined (about 2 minutes)
Slowly pour the dry ingredients into the wet mixture, stirring until well combined.
Evenly pour batter into the cupcake tins.
Bake for 15- 18 minutes or until done.
Note: To test if it is done, stick a toothpick into the middle. If it comes out clean, it is done.
Allow to completely cool before topping with your favorite keto frosting.

Just made them without the Pyure, I used 3 tbsp of truvia and 1/4 c of erythritol. They cam out nice and moist. I feel like they’re missing something to qualify them as a “cupcake”
