 2 medium zucchinis
 24 pepperoni slices
 1 cup shredded mozzarella cheese
 2 tbsp parmesan cheese
 1 tbsp avocado oil
 salt and pepper to taste

Preheat the oven to 350 degrees F.

Trim the ends of the zucchini. Cut in half lengthwise and scoop out pulp, leaving 1/2" shells.

Add salt and pepper to zucchini shells, mozzarella cheese, and top with pepperoni slices. Sprinkle more mozzarella cheese, as well as parmesan cheese.

Place zucchini on a baking sheet oiled with avocado oil. Bake uncovered at 350° for 25 mins. until zucchini is tender. Serve hot.
