 2 medium zucchinis
 24 pepperoni slices
 1 cup shredded mozzarella cheese
 2 tbsp parmesan cheese
 1 tbsp avocado oil
 salt and pepper to taste

Preheat oven to 350 degrees and grease a baking sheet

Trim the ends of the zucchini, cut in half lengthwise, and scoop out pulp

Sprinkle on salt and pepper

Fill zucchini boats mozzarella cheese and pepperoni slices

Sprinkle additional mozzarella and Parmesan on top

Place zucchini on baking sheet and cook for 25 minutes or until zucchini is tender
