 ¼ cup unsweetened almond or coconut milk
 1 egg
 1 scoop protein powder (vanilla, cake batter, or cinnamon bun flavored)
 2 tbsp erythritol
 1 tbsp coconut flour
 ½ tsp vanilla extract
 ¼ tsp cinnamon
 ¼ tsp pumpkin pie spice
 ¼ tsp baking powder
Directions

Combine all of the dry ingredients in a small bowl.

Combine all of the wet ingredients in a microwavable-safe mug.

Slowly stir the dry ingredients into the wet ingredient mixture, making sure to get all of the edges.

Microwave for 45-60 seconds.

If it is still runny in the center, cook in 20-second intervals until a cake-like texture has been achieved.
