Spice up these coconut flour pancakes by adding your favorite toppings like keto chocolate chips, berries, sugar-free whipped cream, and/or syrup! We topped ours with strawberries and sugar-free whipped cream!

Ingredients
 2 tbsp coconut flour
 2 eggs
 2 tbsp butter
 2 tbsp heavy cream
 ½ tsp vanilla extract
 1 pinch salt
 ¼ tsp baking powder
 2 tbsp erythritol or monk fruit
 if batter is too runny, add an additional sprinkle of coconut flour
 optional: top with strawberries and sugar-free whipped cream

Combine all of the ingredients into a bowl and mix until well combined.

Allow the batter to sit for around 20 minutes so that the coconut flour absorbs all of the liquid. You will notice the batter start to thicken.

Once the batter has thickened, heat olive oil or butter in a medium skillet over medium heat.

Once the skillet has heated, spoon some of the coconut flour pancake batter into the center of the skillet.

Cook for 2-3 minutes or until firm and then flip. Cook the other side the same until done.

Repeat these steps until all of the coconut flour pancakes are done.

Serve your keto coconut flour pancakes with sugar-free syrup and all of your favorite low-carb toppings!
