Roasted delicata squash is an impressive side dish that is festive enough to work as part of a holiday meal alongside a roast or ham, but easy enough to throw together on a weeknight. As an added bonus, because the skin on delicata squash is thin, there's no need to peel it before roasting, just cut into slices and mix with delicious maple syrup, cinnamon, and cranberries before roasting.

Preheat the oven to 400°F (205°C) and line a baking sheet with parchment paper.
Add the squash to a bowl along with the cranberries, oil, maple syrup, cinnamon, and sea salt.
Put the squash to the baking sheet and spread out into an even layer. Bake for 25 to 30 minutes or until the squash is fork-tender. Remove from the oven and transfer to a serving bowl.
