Ingredients
 1 cup Peanut butter, softened (make sure peanut butter doesn't have any added sugar)
 ½ cup Butter
  cup Stevia for baking
 ¼ cup Coconut flour
 1 tsp Vanilla extract
Chocolate Cover
  cup Sugar- free chocolate chips
 1 tbsp Coconut oil
 2 tbsp Swerve confectioner
Instructions

In a large bowl, mix together the peanut butter, butter, coconut flour, vanilla, and stevia. Roll into 1 inch balls and place on a waxed paper-lined cookie sheet.

Press a toothpick into the top of each ball (to be used later for dipping) and chill in freezer until firm, about 45 minutes.

Melt chocolate chips with coconut oil in the microwave, 30 seconds at a time, once melted add the stevia and mix well.

Dip frozen peanut butter balls in chocolate holding onto the toothpick. Leave a small portion of peanut butter showing at the top to make them look like Buckeyes. Put back on the cookie sheet and refrigerate for another 15 minutes or until serving.
