Ingredients
 ½ lb ground chicken
 1 egg white
 ¼ tbsp dried thyme
 ½ tsp garlic powder
 1 ½ tsp coconut oil
 ½ lb canned whole tomatoes
 1 tbsp fresh basil, finely chopped
 1 cup fresh kale
 1 oz butter
 1 oz feta cheese
 salt and pepper to taste
Directions

Put the ground chicken, egg white, salt, dried thyme, and garlic powder in a bowl and mix well.

Roll the mixture into meatballs. Wet your hands with water to help prevent the batter from sticking to your hands.

Heat the coconut oil in a large skillet and brown the meatballs until golden brown on all sides.

Reduce the heat and add the canned tomatoes. Simmer for 15 minutes and stir every two minutes. Season to taste with salt and pepper. Add the basil and stir.

Melt the butter in another pan and sauté the kale for 1 to 2 minutes, stirring constantly. Season to taste with salt and pepper. Add the kale to the meatballs and stir.

Serve with feta cheese on top.
