Ingredients
Dough
 2 cups mozzarella cheese, shredded
 3 oz cream cheese
 2 large eggs
 1 tsp vanilla extract
 ¾ cup coconut flour
 1 tbsp unsweetened cocoa powder
 1 tsp baking powder
 ½ cup stevia
 ¼ tsp salt
Filling
 3 tbsp butter, melted
  cup confectioners Swerve
 2 tbsp unsweetened cocoa powder
Frosting
 3 tbsp heavy cream
 3 oz cream cheese
 3 tbsp confectioners Swerve
 ½ tsp vanilla extract
 1 tbsp unsweetened cocoa powder
Directions

Preheat the oven to 375°F and grease a baking pan.

Dough

Combine the mozzarella and cream cheese in a bowl.

Melt cheese mixture in the microwave, stirring until well combined.

Add the remaining dough ingredients to the melted cheese mixture and knead with your hand until well incorporated.

Place the dough between two sheets of parchment paper and roll out to 1/2" thick.

Combine the melted butter, sugar-free sweetener and cocoa powder, mixing until well combined.

Spread filling mixture on the dough and roll up into a log shape.

Cut roll into 6 pieces and place in the greased baking pan.

Bake for 15-18 minutes.

Frosting

Combine all of the frosting ingredients in a mixing bowl and blend until smooth.

Spread frosting onto the rolls.
