 1 tsp onion powder
 ¼ cup olive oil
 ½ tsp salt
 ¼ tsp black pepper
Ingredients for Chicken & Rub
 5 oz mixed greens
 1 tbsp coconut oil
 1 tsp chili powder
 1 tsp onion powder
 ½ tsp paprika
 ½ tsp cumin
 ½ tsp salt
 ½ tsp black pepper

Combine dressing ingredients, except olive oil and water, in a blender or food processor.

Blend ingredients until well incorporated.

Slowly drizzle olive oil in while blending.

Add a little water at a time until desired consistency is reached.

In a separate bowl, combine chicken rub seasoning.

Coat the outside of chicken breast, patting to ensure seasonings stick.

Heat coconut oil in a medium-sized pan.

Cook chicken over medium-high heat for 6–8 minutes on each side until you reach 155–160ºF.

Let chicken rest for 5 minutes, then dice.

Divide mixed greens into 2 serving bowls, add tomatoes and diced chicken, top with dressing. Enjoy!
