Dough
 2 cups part skim shredded mozzarella cheese
 3 oz cream cheese
 2 eggs
 ¾ cup coconut flour
 1 tbsp baking powder
 1 pinch of salt
Spinach Filling
 1 cup whipped cream cheese
 2 cups uncooked spinach, chopped
 1 tbsp melted butter
 1 tsp garlic powder
 salt and pepper to taste

Preheat oven to 375 degrees F and oil a cast iron skillet or pan.

Combine the mozzarella and cream cheese and melt together for 2 minutes in a microwave or on the stove over low heat. Stir until smooth.

Add the remaining dough ingredients, kneading until well incorporated.

Roll dough out on a piece of parchment paper. Top with another sheet of parchment and roll out to 1/2" thickness.

Combine whipped cream cheese, melted butter, garlic powder, salt, and pepper, and whisk until well combined. Add chopped spinach and mix until well incorporated.

Spread filling on top of dough, leaving 1" on each side.

Cut dough into 6 equal parts and place in the skillet.

Bake 15-18 minutes.

Serve hot.
