Add the roast beef to a slow cooker.
Drizzle olive oil on top of the roast beef.
Season beef with dill, thyme, and salt and pepper, turning the roast to cover all sides.
Cook the roast beef in the slow cooker for 6 hours on low heat.
After the beef has cooked for 6 hours, finely chop green onion and cilantro. Add bone broth, water, green onion, and cilantro to the slow cooker.
Cook for another 2-3 hours on low
Remove beef from slow cooker and allow the beef to cool before carving
