If you didn't make this recipe yourself, you'd have no idea that it's made from tofu! This vegan keto tofu pudding tastes just like a sugar-packed chocolate mousse, but is low in calories and carbs, high in protein (over 14g per serving), and is gluten-free and dairy-free. This is the perfect, easy-to-make, guilt-free dessert that everyone will love! Enjoy this recipe as is, of garnish with your favorite berries, keto-friendly chocolate or whipped cream, or nuts!

This recipe calls for vanilla-flavored stevia drops, but you can substitute that for vanilla extract and sweetener of choice (allulose or monk fruit recommended) and add to taste. Additionally, some tofus might have a slightly different texture. If this mixture is too thick, add additional almond milk until the desired texture is achieved.

Please note that there is a difference between silken tofu and soft tofu. Silken tofu does contain eggs and is not vegan. Soft tofu, on the other hand, is not made with eggs (and is what this recipe calls for). Silken tofu also has a different texture than soft tofu.

Add the tofu, almond milk, vanilla stevia drops, and salt to a blender and blend until well combined.

In a microwavable safe bowl, add the chocolate chips and coconut oil. Melt and stir well.

Add the melted chocolate to the blender and blend until smooth and free of any lumps.

Pour the keto tofu pudding mix into a large air-tight container or 4 seperate ramakins.

Place the keto tofu pudding in the fridge overnight to set.

Once set, garnish your keto tofu puddings with the unsweetened cocoa powder, serve, and enjoy!
