Preheat the oven at 350 degrees Fahrenheit and line 12 muffin tins.
Combine all of the dry cupcake ingredients in a bowl.
Stir in the eggs, keto creamer, and water. Mix until well combined.
Evenly pour the keto birthday cake batter into the 12 tins.
Bake for 24 minutes or until golden brown and done in the center.
While the keto birthday cake cupcakes are cooking, make the frosting.
To make the frosting, mix the cream cheese, vanilla extract, and monk fruit.
Once the cupcakes have completely cooled, pipe the frosting onto each.
Top with sprinkles and/or chocolate chips.
