 ½ tsp garlic powder
 1 ½ tsp coconut oil
 1 cup fresh kale, stems removed
 1 oz butter

Put the ground chicken, egg white, salt, dried thyme, and garlic powder in a bowl and mix well.

With wet hands to help prevent sticking, roll the chicken mixture into meatballs.

Heat the coconut oil in a large skillet and brown the meatballs until golden brown on all sides.

Reduce the heat and add the canned tomatoes. Simmer for 15 minutes and stir every two minutes. Season with salt and pepper, to taste. Add the basil and stir to combine.

Melt the butter in a separate pan and sauté the kale for 1 to 2 minutes, stirring constantly, until wilted. Season with salt and pepper, to taste. Add the kale to the meatballs and gently stir to combine.

Serve the meatballs and sauce with feta cheese on top.
