Great cherry tomatoes--try Sungolds--will really make this omelet, which relies on just a few simple ingredients. If you don't like brie, try subbing it out for another cheese. Cheddar and tomatoes is a classic combination, or go fancier with gruyere or goat cheese. Add extra parsley for even more of its great health benefits, and add other fresh herbs if you have them on hand.

Heat the butter in a non-stick pan over medium heat.
Whisk the eggs and parsley in a small bowl and season with salt and pepper to taste. Add the eggs and cook until almost set. Place the brie and tomatoes on one half of the omelet and fold the other half over top.
